Aplicaciones
El benzoato de potasio se fabrica principalmente para su uso en alimentos y bebidas. Es un conservante químico que, en concentraciones muy bajas, inhibe la actividad de los microorganismos. Se utiliza en bebidas carbonatadas. La vida útil de la sidra no pasteurizada se puede ampliar considerablemente al añadirle benzoato de potasio. También se utiliza en muchos fuegos artificiales para que emitan un silbido.

Solubilidad
Soluble en etanol, ligeramente soluble en metanol e insoluble en éter.

Notas
Higroscópico. Proteger de la humedad y del agua. Almacenar en gas inerte seco, lejos de agentes oxidantes y de la humedad.
