La L-metionina (número de CAS 63-68-3) es un aminoácido esencial que contiene azufre.La L-metionina interviene en la desintoxicación celular en varias especies.

L-Methionine iserves as a chelating agent for heavy metals, as a flavoring agent and nutritional supplement for foods. It acts as a feed additive, vegetable oil enrichment and as a single cell protein. In addition to this, it is used as a hepatoprotectant and also acts as a lipotropic agent and prevents excess fat buildup in the liver.

Aplicaciones
La L-metionina se utiliza como un aminoácido esencial para el desarrollo humano y actúa terapeuticamente como un antídoto para la intoxicación con acetaminofén. Sirve como agente quelante para los metales pesados, como agente aromatizante y suplemento nutricional para los alimentos. Actúa como aditivo alimentario, para el enriquecimiento de aceite vegetal y como proteína celular individual. Además de esto, se utiliza como hepatoprotector y también actúa como agente lipotrópico y previene la acumulación excesiva de grasa en el hígado.

Solubilidad
Soluble en agua e hidrocloruro. Ligeramente soluble en ácido acético. Insoluble en etanol, benceno, acetona y éter.

Incompatible con agentes oxidantes fuertes.
